Our vegan stuffed mushrooms made with mashed tofu, fresh basil and garlic will melt in your mouth
Ingredients
Large mushrooms
Tofu
Fresh basil
onion
garlic
olive oil
pine nuts
Preparation
STEP 1
Pull out the stems from the mushrooms and clear out any bits left in the middle to make space for your filling. Dice some onion and crush some garlic and sauté in a pan. Add fresh basil to a food processor and mix, then add the tofu and the onions and garlic. Mix together so that you have your filling.
STEP 2
Fill your mushrooms with a liberal amount of the filling and sprinkle a few pine nuts on the top and a dash of olive oil, salt and pepper. Put them on a baking tray line with baking paper and cook in a pre heated oven for around 15 - 20 minutes.
