About the Recipe
This quiche is so easy to make and so delicious, it goes great with salad as a healthy lunchbox filler.

Ingredients
Red, green & yellow peppers
Courgette
mushrooms
Aubergine
Eggs
onion
garlic
grated cheese
vegetable stock cube
pie pastry
margerine
italian herbs
salt & pepper
Preparation
STEP 1
Chop all of your vegetables into strips, dice your onions and fry together with chopped garlic and a powdered vegetable stock cube. Mix this together with your eggs and grated cheese, italian herbs, salt and pepper
STEP 2
Line your pie tray with margarine and place your pre rolled pie pastry into the mold. Then add the mixture, sprinkle some cheese on top and bake in the oven at 180 degrees for 45 minutes.
STEP 3
Serve with some rucola or fresh basil on top.
