A healthy pizza alternative and great way to use up left over courgette, aubergine or other vegetables at home is to make them into mini pizzas to bake in the oven
Ingredients
courgette or aubergine
tomato puree
grated cheese
Italian herbs
olive oil
Preparation
Slice your courgette or aubergine into thick slices, add your tomato puree or a dollop of vegan Bolognese, sprinkle with cheese and Italian herbs, a dash of olive oil and then add a topping if you choose. Put them on a baking tray and cook for about 15 minutes in a pre heated oven at 180 degrees.
