ROASTED VEG WITH SWEET RED PEPPER SAUCE

Roasted Vegetables with a sweet red pepper sauce

A simple but effective starter, this red pepper sauce is so tasty you will want to put it on everything!

Ingredients

- 1 bunch of asparagus

- 4 large carrots

- 1 large sweet potato

- 1 red onion

- 1 jar of sweet red peppers

- 6 cloves of garlic

- 1 tsp paprika

- 1/2 lemon

- olive oil

- salt and pepper

The Method 

Peel and chop your sweet potato into wedges and your carrots into sticks and place in a baking tray with olive oil, salt and pepper. Next to make the red pepper sauce is super quick and easy, just add your sweet red peppers to the blender along with a few roasted cloves of garlic, a dash of white wine, lemon juice and a splash of olive oil. 


Place your roasted vegetable on a slate or board in cris crosses with 1 colour in 1 direction and the other colour in the other direction and drizzle with the red pepper sauce.
